This is a very versatile drink and can bring its unique flavour when added to cereal and to make even tastier custard, rice pudding, pancakes, scrambled eggs and other milk based recipes.

A dairy-free "Smoothie". Any soft fruit can be used – banana is particularly good. Serves 2 people.
0.5 pint Tiger White (unsweetened)!
chopped fruit
ice (optional)
1. Blend all ingredients together. |

The pancakes can be served with lemon juice or ice-cream or filled with stewed fruit. Makes 4-6 pancakes.
0.5 pint Tiger White (sweetened)!
1 egg
125g flour
Oil for frying
1. Beat the Tiger White and egg together.
2. Gradually whisk in the flour until the mixture is smooth.
3. Heat a little oil in a frying pan.
4. Fry the pancakes on both sides. |

Can be served with stewed fruit or jam, if desired. But it's delicious just by itself. Serves 4 people.
4oz/100g short-grain rice
1.5 pints/750ml Tiger White (sweetened)
2 eggs, beaten
Grated rind of 1 lemon
Nutmeg
1. Pre-heat oven to 150ºC / 300ºF / gas mark 2
2. Put the rice in a saucepan, add the Tiger White and bring slowly to the boil. Simmer gently for 10 minutes, stirring occasionally.
3. Take off the heat and stir in the eggs and lemon rind.
4. Pour into greased, baking dish and sprinkle on some grated nutmeg.
5. Bake for 40 minutes, stirring after 15 minutes, until golden brown.

A delicious dairy-free custard.
1 pint Tiger White (sweetened)
2 tablespoons custard powder
Saucepan method
1. In a jug, mix the custard powder with a little of the Tiger White taken from 1 pint, to make a smooth paste.
2. Heat the remaining Tiger White in a non-stick saucepan until nearly boiling.
3. Pour onto the custard mix, stirring well.
4. Return to the saucepan and bring slowly to the boil, stirring continuously.
Microwave method
1. Follow step 1 above.
2. Pour on the remainder of the Tiger White, stirring well.
3. Cook on full power for about 4 minutes, until it thickens and boils. Keep stopping and stirring. Watch that it doesn't boil over. |

A dairy-free liqueur which tastes very similar to a "Baileys" Irish Cream.
4 parts Tiger White
1 part rum
1. Mix together. Serve with ice. |
